Easy Granola Recipe

I ran out of the tasteless, store-bought granola I had been putting on my yogurt yesterday and decided to make my own! I knew it would be delicious - and I was right! Here is my recipe. Tweak it however you like to suit your own tastes.

Easy Granola

3c old-fashioned oats
3/4 c organic coconut oil
1T cinnamon
1/8t ginger
1/8t salt
1T honey
1T molasses
1t vanilla
3/4c raisens
3/4c shredded coconut
1/2c slivered almonds

Melt oil in sauce pan on medium low heat, add spices, honey, molasses, vanilla. Add oats and stir, stir, stir to coat them evenly and heat them through, about 10 minutes or so. Remove from heat and add almonds, coconut and raisins.

Spread out onto a large piece of wax paper on your counter top to cool off. Place in sealed food container when cool.

It's great by itself, with soy milk, on ice cream or yogurt. Enjoy!
